Pass The Dutchie . Where to buy & how to season your dutch pot

Back in 1982 a young British Jamaican band called Musical Youth sang about that iconic Caribbean cooking pot “the Dutchie” it made No 1 in the music charts & introduced many people to the idea of cooking with this fabulous piece of kitchen kit.

At Jamarado, we’ve enjoyed cooking with our dutchies for many years and on a recent meander through Brixton Village Market we spotted a few of these iconic pots on sale…..

Now once you’ve bought a “dutchie” here are a few pointers to help you get great results from your new purchase:

1)  Wash the pot with plenty of hot soapy water, this will help you to get rid of any grease & oil leftover from the manufacturing process – then dry thoroughly.


2)  Season your pan – turn your oven onto 400f/200c/gas mark 6 & pop in two oven trays to catch any drips. 


3)  Smear some Trex or other type of vegetable shortening in a thin layer all over the inside of the pot & the inside of the lid & place on the oven trays in the pre heated oven.


4)  If your pot is cast aluminium pop it into the oven for 15 – 20 minutes, if it’s made from cast iron then you’ll need to leave it for 45 minutes to an hour. Once the times up, bring them out & wipe clean with kitchen roll or a tea towel.


5)   Your pots are now ready to go…..over time the oils that you cook with will continue to create a seasoned non-stick surface, just make sure that when you wash this baby up, you only use hot water along-side a soft non-scratch sponge then give it a little vegetable oil after you’ve dried it up (just like you’d moisturise your skin). This keeps it at its best.

Now you’re ready to cook, try an Ital stew, chicken casserole, beef stew & dumplings - the recipe options are endless or be a bit more daring and try a sweet option like a fruit cobbler or give bread a go – don’t forget these pots aren’t just for the oven & hob, you can take them outdoors too & pop them on a camp fire, BBQ or charcoal brazier!
